Creamy Curry Lemon Chicken


  • 1/2 cup fat free sour cream

  • 1/4 cup light mayonnaise

  • 2 tablespoons lemon juice

  • 1 teaspoon curry powder

  • 1/2 tspn sugar

  • 1/2 tspn black pepper

  • cooking spray

  • 4 boneless skinless chicken breasts (about 4 ounces each). rinsed and patted dry

  • 2 slices whole wheat bread, grated in blender or by hand grater (about 1 cup)

  1. Preheat oven 400 degrees f. In a small bowl, combine sour cream, mayonnaise, lemon juice , curry, sugar, salt and pepper. Stir until well blended.

  2. Coat a 9-inch pie pan with cooking spray. Arrange chicken pieces in pan and spoon sour cream mixture evenly over all. Sprinkle with breadcrumbs and bake 30 to 40 minutes or until chicken is no longer pink in center.

I've got to quit reading these excellent chicken recipes. This one also made me hungry the same as highlandcitygirl. It sounds so easy to fix and the final product could even be served at a fancy dinner. What a great way to use curry!
