Lemon Shrimp w/Basil


  • 1 pound raw medium shrimp

  • peeled and deveined

  • 4 garlic cloves, minced

  • 1 teaspoon grated lemon rind

  • 1/4 teaspoon seafood seasoning mix

  • 1/4 teaspoon dried red pepper flakes

  • 2 tablespoons diet margarine

  • 2 tablespoons lemon juice

  • 2 tablespoons chopped fresh basil

  1. Place a 12-inch nonstick skillet over medium heat until hot. Coat skillet with cooking spray. Add shrimp, garlic, lemon rind, seafood seasoning and red pepper flakes. Cook 4 minutes or until shrimp are opaque in center, stirring frequently.

  2. Remove from heat; add remaining ingredients. Serve in individual baking dishes or ramekins.

A great recipe that is very low in carbs. It is a recipe that cooks quickly and with the basil it will have so many excellent flavors.
