Light Mini Ruebens

2 Tablespoons reduced fat mayonnaise

4 teaspoons dijon mustard

pinch of cayenne pepper (optional)

2 (8oz) loaves "coacktail size" pumpernickel or rye bread(44 slices)

1 cup grated wiss or Fontina cheese(40z)

6 ounces thinly slices turkey pastrami

Freshly ground pepper

1 cup saurekraut, rinsed and squeezed dry

2 tablespoons of canola oil
Stir together the mayonnaise, mustard and cayenne pepper in a small bowl.
Spread over bread slices. Sprinkles half cheese over half the bread slices. Top with turkey pastrami, fresh ground pepper, saurekraut and remaining cheese. Place the remaining bread slices firmly on top.
Brush some oil in a large nonstick skillet or griddle and heat over medium heat.
Add sandwiches in batches and cook until slightly toasted and cheese is melted about 445 seconds each side. Cut each sandwiches into 2 traingles. Serve warm.
I usually cook in batches and keep on a plate in a warm oven until all are cooked.

how many servings does this reclpe make. I see that it makes 22 mini sandwiches, surely you don't get all in 1 serving. It sounds really good and I would like to try it, but I want to know how many I can have for a serving. I am an uncontrolled diabetic and I need to know all the skinny on recipes before I will put it in my mouth, not because I won't like it but beacause of my crazy glucose ##'s

Sounds "yummy in my tummy" to steal a phrase from my 4-year-old son. The only problem that I can see right now is that I'm afraid I wouldn't be able to stop at 1. Sounds like a great party food too.

Low calorie, low carb, and low cholesterol, all in one yummy little sandwich. This recipe actually made my mouth water thinking about eating one. lol Next time I go to the store all I have to get to fix these is the little bread. I can't wait!
