12 ounces peeled raw medium shrimp, fresh or frozen and thawed
2 tablespoons Worcestershire sauce
3 tablespoons lemon juice
2 tablespoons reduced-fat margarine(35% vegetable oil)
1 tablespoon finely chopped parsley(optional)
Serving size 1/4 cup
Place a large nonstick skillet over medium heat until hot. Add the shrimp, worcestershire sauce, lemon zest,and lemon juice to the skillet. Cook 5 minutes or until shrimp is opaque in center, stirring frequently.
Using a slotted spoon, remove the shrimp and set aside in serving bowl. Increase the heat to medium high, add the margarine, bring to a boil, and continue to boil 2 minutes or until the liquid measures 1/4 cup, stirring constantly.
Pour the sauce over the shrimp and sprinkle with parsley, if desired. Serve with wooden toothpicks.
