English Muffin Melts


  • 4 Whole Wheat English Muffins, Cut in Half

  • 2 tablespoons reduced-fat mayonnaise

  • 3 ounces sliced reduced-fat Swiss Cheese torn in small pieces

  • 4 ounces oven roasted deli turkey, finely chopped

  1. Preheat the broiler

  2. Arrange the muffin halves on a baking sheet and place under the broiler and spread 3/4 teaspoon mayonnaise over each muffin half.

  3. Arrange the Cheese pieces evenly on each muffin half and top with the turkey

  4. Return to the broiler and cook 3 minutes, or until the turkey is just beginning to turn golden and the cheese has melted.

I've made something VERY similar to this, just adding a little tomato paste or sauce and some extra seasonings (Italian style). Like having a mini pizza! (Watch the carbs on whatever tomato paste or sause you use, though.)
