1 lb. extra lean ground beef or turkey
1 medium onion, diced
1/2 tsp salt or seasoned salt
1/4 tsp pepper
3/4 tsp Italian seasoning
1 14 oz. can of diced tomatoes with Italian herbs. drained. Reserve liquid.
1 cup shredded 75% light cheddar and/or part-skim or fat free mozzarella
1 cup heart-healthy pancake mix
1/2 cup low-fat milk
4 oz. egg substitute
Preheat oven to 400 F.
Spray a nonstick skillet with cooking spray. Brown beef and onions, then add salt, pepper, 1/4 tsp. Italian seasoning and half of the diced tomatoes.
Spray a round, oven-safe pie plate with cooking oil. Pour in meat mixture and sprinkle cheese on top.
Stir together pancake mic, egg substitute, milk and 1/4 tsp of the Italian seasoning, spoon it over cheese.
Bake until a knife inserted in the middle of the pie comes out clean (25 to 30 min).
Bring reserved diced tomatoes reserved liquid and remaining Italian seasoning to a boil. Remove from heat. When pie is ready, cut into slices, plate and spoon warm sauce over each portion.
