Roasted Green Beans Dijon

  • 1 lb. fresh green beans trimmed

  • 2 tsp olive oil

  • 1/2 tsp Dijon mustard

  • 1/3 tsp salt

  • 1/4 cup snipped fresh parsley

  • Vegetable oil spray

  1. Preheat oven to 425*F.

  2. Be sure beans are thoroughly dry. Put the beans on a nonstick baking sheet. Lightly spray; toss. Arrange the beans in a single layer on the baking sheet. Spray again.

  3. Bake for 10 minutes or until tender.

  4. Meanwhile, in a small bowl, stir together the oil, mustard and salt.

  5. To serve, drizzle the oil mixture over the beans. Stir gently. Sprinkle with the parsley.
