Mediterranean-Style Chicken

  • 4 small skinless boneless chicken breasts

  • 1 can Italian-style diced tomatoes, undrained

  • 1/2 cup black olives,chopped

  • 1 tbsp. lemon zest

  • 1 cup Kraft finely shredded Italian five cheese blend blend

  1. Heat large nonstick skillet on medium high heat. Add chicken; cover. Cook 5 to 7 min. on each side or until done(165 F). Remove chicken from skillet.

  2. Add tomatoes, olives and lemon zest to skillet. Cook 4 min. or until hot, stirring often.

  3. Return chicken to skillet; cook 1 min. or until hot. Top with cheese.

  4. Serve over hot cooked rotini or penne pasta.

This is a very good recipes. The lemon zest is a must. The flavor is so refreshing. I also had no need to serve it over anything. Good just the way it was…Debe
