4 boneless chicken breasts
1 tbsp begetable oil
1 medium onion, sliced
1/4 medium fresh green bell pepper, julienned
1/4 medium red bell pepper, julienned
1/2 cup fresh mushroom slices
1 pinch salt and pepper
Heat oil in a medium skillet. Add chicken and cook until lightly browned, cooking each side 2 to 3 minutes or until cooked through. Remove and deep warm.
Add onion, peppers, and mushrooms to skillet. Sprinkle with salt and pepper; cook until just crisp-tender.
Serve over chicken.
