Onion-Pepper Chicken

Ingredients
  • 4 boneless chicken breasts

  • 1 tbsp begetable oil

  • 1 medium onion, sliced

  • 1/4 medium fresh green bell pepper, julienned

  • 1/4 medium red bell pepper, julienned

  • 1/2 cup fresh mushroom slices

  • 1 pinch salt and pepper

Directions
  1. Heat oil in a medium skillet. Add chicken and cook until lightly browned, cooking each side 2 to 3 minutes or until cooked through. Remove and deep warm.

  2. Add onion, peppers, and mushrooms to skillet. Sprinkle with salt and pepper; cook until just crisp-tender.

  3. Serve over chicken.
