Turkey replaces chicken in this classic rice soup.

Leftover Turkey Rice Soup
  • 4 Cups of Defatted Chicken broth (can use chicken bouillon as well)

  • 1/2 cup diced celery

  • 1/4 cup diced carrots

  • 1/4 cup diced onions

  • 1/2 teaspoon poultry seasoning

  • 1/4 teaspoon dill weed

  • salt and pepper to taste

  • 4 ounces cooked turkey, cubed (discard any skin and fat)

  • 1 cup cooked rice

  1. In a medium saucepan, combine broth, celery, carrots, onions and seasonings. Cover and cook over medium low heat until vegetables are tender, about 20 minutes. Add turkey and rice. Heat through.

Yum sound's good to me, I would like to tryout this recipe with a couple of those little Cornish Hens, since I didn't cook a turkey this year.

Sounds delicious, will try this one tonight as I have some extra turkey to get rid of. LOL
