Tomato and Cucumber Salad

  • 3 c. chopped, peeled cucumber

  • 2 c. chopped tomato

  • 3/4 c. finely chopped red onion

  • 1/4 c. finely chopped fresh parsley

  • 3 T. finely chopped fresh cilantro

  • 1/2 tsp. salt

  1. Combine all ingredients in a large bowl.

  2. Cover and chill at least 2 hrs. Serve with a slotted spoon.

I make this all the time and if I need some carbs I add some croutons, the juices soak it up to soften them.
