Cucumber Garlic Dip

Ingredients
  • 1 medium cucumber, peeled, seeded, and chopped

  • 8 ounces feta cheese, crumbled

  • 1/2 cup thinly sliced scallions

  • 1/4 cup light (reduced-calorie, cholesterol-free) mayonnaise

  • 1/4 cup plain low-fat yogurt

  • 1 teaspoon dried oregano

  • 3 tablespoons chopped fresh parsley

  • 3 cloves garlic, finely minced

Directions
  1. In a medium bowl, combine all the ingredients and mix well. Refrigerate for at least 2 hours.

  2. Serving Size = 2 tablespoons
