Italian Beef Skillet

  • 1 lb. beef, boneless round steak

  • cooking spray

  • 2 c. fresh mushrooms

  • 1 c. onion

  • 1 c. green bell pepper

  • 1/2 c. celery

  • 2 cloves garlic

  • 1 can tomatoes, diced

  • 1/2 tsp. basil, dried

  • 1/4 tsp. oregano, dried

  • 1/8 tsp. crushed red pepper

  • 2 T. parmesan cheese

  • pasta

  1. Trim fat from meat. Cut meat into 4 seving-size pieces. Lightly coat a large skillet with cooking spray. Heat over medium heat. Add meat and cook until brown. Remove meat from skillet; set aside.

  2. Add mushrooms, onion, peppers, celery and garlic to skillet. Cook until vegetables are nearly tender. Stir in undrained tomatoes, basil, oregano, and crushed red pepper. Return meat to skillet, spooning vegetable mixture over meat. Cover and simmer about 1 1/4 hours or until meat is tender, stirring occasionally.

  3. Transfer meat to a platter. Spoon vegetable mixture over meat and sprinkle with parmesan cheese.

  4. If desired, serve over hot pasta.
