BLACK AND BLUE COLESLAW

Ingredients
  • 6 cup red cabbage, shredded

  • 1/2 lb red grapes , halved (seedless)

  • 1 cup chopped parsley

  • 3/4 cup light mayonnaise , if desired) (reduced-calorie, if desired)

  • 4 tbsp Cheese, blue, crumbled

  • 4 tsp dijon mustard

  • 2 tbsp sugar

  • 2 tbsp cider vinegar

Directions
  1. In large bowl, toss cabbage, grapes, and parsley. Stir together remaining ingredients in a small bowl, add to the slaw and toss well.

  2. Cover and chill for at least 2 hours before serving.

  3. If desired, sprinkle with additional crumbled blue cheese and garnish with red grapes.
