PROSCIUTTO AND PEAS

Ingredients
  • 1 oz prosciutto , thinly sliced

  • 1/4 cup fresh chopped onion

  • 1 tsp olive oil

  • 1 cup Peas, green, sweet, frozen

  • 1/4 cup water

  • 1 Bouillon, chicken, sodium free, instant packet , 1/2 tsp

  • 1/4 tsp ground oregano , crushed, or 3/4 tsp. snipped fresh oregano

  • 1 pepper, black, dash

  • 1 oz pine nuts , toasted (or chopped pecans)

Directions
  1. Cut prosciutto into thin strips.

  2. In a medium saucepan cook onion in hot oil until tender.

  3. Stir in peas, water, bouillon granules, dried oregano (if using), and pepper.

  4. Simmer, covered, for 4 to 5 minutes or just until peas are tender.

  5. Stir in fresh oregano (if using) and toasted pine nuts.
