Deviled Eggs

  • 1 dozen large eggs

  • 1/2 cup fat-free cottage cheese

  • 2 tbsp. mayonnaise, low-fat

  • 2 tbsp. sweet pickle relish

  • 1/2 tsp. dry mustard

  • 1 dash of paprika, for garnish

  1. Place the eggs in a large saucepan with enough cold water to cover by 1 inch. Bring to a simmer and cook 10 minutes (start the timer as soon as the water bubbles). Drain and set the pan under cold running water for 2 minutes. Peel the eggs and slice them in half lengthwise. With a small spoon, carefully remove the yolks, reserving 6 yolks for another use. In a blender, puree the cottage cheese until smooth; set aside.In a medium bowl, mix the remaining 6 egg yolks with the cottage cheese mixture, mayonnaise, relish, and mustard; spoon the mixture back into the hollowed-out egg whites. Arrange the eggs on a platter and sprinkle with paprika. Serves 12.

I love deviled eggs but I can't quite imagine the cottage cheese. I'm gonna try them and let you know. It might take a few days…when I go shopping.

I have never made them with cottage cheese...shhhh, don't tell my hubby. He will like them and never know it's in there. LOL

Try this sometime- simple and gooood: use dijon mustard, homemade vinaigrette, very finely chopped onion, tarragon and black pepper. But you can play with deviled eggs almost endlessly- parsley, shredded carrots and on and on…

We just tried this recipe and it is wonderful. Loved the addition of cottage cheese to help keep the calories and carbs low.

i wish my poor sister-law had this recipe. one christmas long ago, i thought she was trying to kill us! she was type 1 and we didn't know them eggs was special!
