Chocolate Nut Balls

  • 2 ounces unsweetened (preferably dark)baking chocolate

  • 2 Tablespoons vegetable oil

  • 1/2 cup plus 2 tablespoons of water

  • 1 cup date sugar

  • 1 1/2 cup chopped almonds, pecans, or walnuts

  1. In a small saucepan, melt chocolate, oil and water over medium heat.

  2. Reduce heat to low, add date sugar. Cook for 3 minutes, stirring constantly.

  3. Remove pan from heat and stir in chopped nuts.

  4. Drop by the spoonful and roll into 24 balls on a dish. If desired, roll in additional chopped nuts. Let balls cool. Store in the refrigerator or freezer.

  5. Makes 24 balls
