Easy No-Bake Lemon Cheesecake

  • Crust

  • Non-fat nonstick cooking spray

  • 1/3 c graham cracker crumbs

  • 1 tbsp Equal sweetener

  • 1/4 tsp Molly McButter dry butter flavor sprinkles

  • Filling

  • 1 box (0.3 oz) sugar-free lemon Jell-O

  • 1/2 c boiling water

  • 1 tub (12 oz) fat-free cream cheese

  • 1 tub (8 oz) fat-free cream cheese

  • 1 c fat-free sour cream

  • 1 tsp vanilla

  • 3/4 c Equal sweetener

  • grated peel from 1 lemon

  1. Spray 9-inch pie plate with cooking spray. In small bowl, combine graham cracker crumbs, sweetener, and butter flavor sprinkles and stir with spoon.   2. bowl, mix cream cheese with electric mixer until smooth. Beat in sour cream. Add vanilla, sweetener, grated lemon peel and Jell-O. Mix until smooth. Gently pour filling into pie plate, trying not to disturb graham cracker crumbs. Chill for a few hours and serve.
