Italian Salsa Salad

Ingredients
  • 10 oz grape tomatoes or cherry tomatoes, halved (about 2 cups)

  • 1/2 medium green bell pepper, chopped

  • 1/2 c chopped red onion

  • 1/2 c snipped fresh parsley

  • 3 tbsp capers, rinsed and drained

  • 2 tbsp cider vinegar

  • 1 tbsp olive oil (extra virgin preferred)

  • 2 tsp dried basil, crumbled

  • 1/8 tsp crushed red pepper flakes

  • 1/4 tsp salt

Directions
  1. In a medium bowl, gently toss all ingredients. Let stand for 10 minutes before serving.

  2. Makes 6 Servings.
