Simple Southern Cornbread

  • 1 cup yellow cornmeal

  • 1 cup flour

  • 4 tsp baking powder

  • 3/4 tsp salt substitute

  • 1 whole egg, beaten

  • 1 cup skim milk

  1. In a large bowl, sift the dry ingredients together. Add the beaten egg and skim milk; mix well.

  2. Into 12x8-inch pan, which has been sprayed with a nonstick vegetable coating, pour the corn bread dough.

  3. Bake at 425F for 25 minutes, or until a toothpick inserted in the center comes out clean. Cut into 12 squares and serve warm.

I haven't had corn bread in quite a while because I thought is was taboo. Great with red beans & ground meat.

Yum!!! I love corn bread but I did not know we diabetic can have it or not because I know corn is not a diabetics friend. So, I thought there goes cornbread. But Yeah!!! I can still have it with my Black-eyed peas and Brown rice.
