CHOOSE A FRUIT ICEE

Ingredients
  • 1 1/2 cups orange sections, fresh OR

  • 22 oz mandarin oranges, canned OR

  • 1 1/2 cups raspberries, OR

  • 1 1/2 cups strawberries

  • 1/3 cup sugar, (use Equal)

  • 1 cup warm water

  • 2 tbsp lemon juice

  • optional garnish

Directions
  1. Use fresh or frozen unsweetened berries. In a 2 cup measure stir

  2. the sugar into warm water till dissolved. In a blender container

  3. or food processor bowl combine desired fruit, sugar mixture, and lemon

  4. juice. Cover and blend or process till mixture is nearly smooth. Pour into

  5. a 9 x 5 x 3" loaf pan. Cover and freeze for 4

  6. to 5 hours or till almost firm. Transfer the frozen mixture to a chilled

  7. large mixer bowl. Beat with electric mixer on medium speed for 2 minutes or

  8. till fluffy. Return fruit mixture to loaf pan.

  9. Cover and freeze for 6 hours or till firm. Let the fruit ice stand about 20

  10. minutes at room temperature before serving. To serve, use an ice-cream

  11. scoop and scrape along ice to form a scoop. If desired, garnish each

  12. serving with mint sprig or fresh berries.

  13. Makes 6 servings.
