Apple Coleslaw

  • 1 cup shredded red cabbage

  • 1 cup shredded green cabbage

  • 1/2 cup shredded carrots

  • 1/4 cup diced Granny Smith apples

  • 2 tbsp raisins

  • 2 tbsp apple cider vinegar

  • 3 tbsp unsweetened apple juice concentrate

  • 1/2 cup low-fat mayonnaise

  • Salt, to taste

  • Freshly-ground black pepper, to taste

  1. In a large salad bowl, combine the first five ingredients.

  2. Whisk together in a small bowl the remaining ingredients. Pour the dressing over the slaw and toss well. Cover and refrigerate for 30 minutes before serving.

  3. This recipe yields 6 servings. Serving size: 1/2 cup.
