Lemon Ginger Salmon

Ingredients
  • 2 fresh green onions

  • 1 1/2 tsp fresh ginger root , minced

  • 1 tsp garlic cloves, chopped , minced

  • 2 tbsp low sodium soy sauce

  • 1 tbsp fresh lemon juice

  • 1 tsp grated lemon rind

  • 1 tsp sugar

  • 1 tsp sesame oil

  • 20 oz salmon fillet (4 fillets-about 5 oz. each)

Directions
  1. Preheat oven to 425 degrees F.

  2. Chop the green onions and set aside for garnish.

  3. In a bowl mix the white part of the onion, gingerroot, garlic, soy sauce, lemon juice, lemon rind, sugar, and sesame oil.

  4. Place salmon in a shallow baking dish, single layer, and place marinade on top.

  5. Let sit room temperature for 15 minutes or refrigerate for 1 hour.

  6. Bake, uncovered until salmon turns opaque, about 15 minutes.

  7. Serve with sauce and sprinkle with green onions.
