Greek Salad Bites

Ingredients
  • 1 cup Cheese, feta, crumbled

  • 1/2 cup Sour Cream

  • 1/4 cup chopped parsley

  • 2 tbsp Tomatoes, sun dried, oil pack, drained , finely chopped

  • 2 medium garlic cloves , minced

  • 1/2 tsp black pepper

  • 1 1/2 medium cucumber

  • 1/4 cup fresh basil , finely shredded

  • 2 oz pitted calamata olives

Directions
  1. In a small bowl, stir together feta cheese, sour cream, parsley, dried tomatoes, garlic, and pepper. Cover and chill for 2 to 24 hours.

  2. Using a sharp knife, trim the ends from cucumbers; discard ends. Slice the cucumbers diagonally into 1/4-inch slices.

  3. Spoon 11/2 teaspoons cheese mixture onto each cucumber slice. Arrange cucumber slices on a serving platter.

  4. In a small bowl, combine basil and olives. Spoon some of the mixture over each cucumber slice. Serve immediately.
