Stuffed Mushrooms

Ingredients
  • 1 tbsp olive oil

  • 1 cup fresh chopped onion

  • 1/2 cup fresh mushrooms , finely chopped (shiitake recommended)

  • 2 medium garlic cloves , minced

  • 1 pinch kosher salt

  • 1 pinch black pepper , freshly ground

  • 1 cup fresh chopped spinach , finely chopped (drained)

  • 1/2 cup chopped walnuts , ground

  • 16 button mushrooms , stemmed and left whole

Directions
  1. Preheat the oven to 350 degrees F.

  2. In a large skillet, heat the oil, then add the onions, shiitake mushrooms, garlic, salt, and pepper and cook for 10 minutes, stirring frequently.

  3. Add the spinach and cook for about 5 minutes. Remove the mixture from the heat, add walnuts, and chop again.

  4. Stuff the white mushrooms with the mixture and bake for 10 minutes.
