Q:

I want to eat better but I just can't figure out what to do. Any helpful tips? I have been type 2 for three years now and I am a very picky eater. My diet consists of pizza, pasta and burgers. I have never been able to eat salads or very many veggies, except corn or green beans.

Since you like pizza, pasta and burgers, look for recipes to prepare these foods in different ways. For example, try making your own pizza (you can buy pizza dough in your supermarket) and experiment with different kinds of toppings, such as chicken, lean ham or prosciutto; black beans and salsa; pesto; different kinds of cheese, like feta cheese; and yes, even different types of vegetables that you think you might not like, such as artichokes or onions. You can do the same with pasta – try a whole grain pasta topped with tomato sauce and ground turkey meatballs; go meatless and try a pasta dish using chick peas, cannellini beans or lentils as a protein source. Add some nutrition to your burgers by mixing in shredded veggies like zucchini or carrots. Search for recipes online or browse the cookbook section in your bookstore. What might be the most helpful, though, is to meet with a dietitian. He or she can give you more specific guidance regarding other types of foods that you might like, as well as how much food to eat at your meals to help with your diabetes control.
