I was reading about the 5 foods that help lower blood glucose levels such as green bananas. It mentioned that green bananas have a resistant starch that doesn't break down into sugars. It also mentioned that beans, pasta, and potatoes, when cooled, have the same affect. So, my question is, is it okay to eat potatoes, in moderation, of course, in a dish like potato salad if the potatoes are cooled? I truly LOVE potato salad!
