Corn What your take on corn is it something type 2 can eat or should we stay away?

Corn is a carb, but if you eat in moderation and portion it, I think you would be okay. Just don't over do it.

I like it but I need to cover for it if I eat it .

Only your glucometer can tell you for sure. My meter tells me to stay away from corn products. Take your Blood Glucose number ("BG#s") before you eat the suggested portion of the corn product and then again 1 & 2 hrs after you eat it. (don't eat a meal, just the corn product) A rise of 50 pts after 2 hrs would indicate you probably should avoid that product, or reduce the portion size (then retest using the reduced portion size).

My meter says don't eat! Your body may react differently.

I love pretzels, I think it is made out of wheat flour. Just get the low sodium and I only eat one serving. I just fit it into my meal plan and don't over eat it.
