Update on Zucchini Pizza

I finally tried the Zucchini Pizza Crust recipe after calculating the total carbs per recipe. I LOVE that I can have pizza again even though it is a bit labor intensive but worth it in my opinion. The original Diabetic Connect recipe showed 1 serving per recipe for this crust but it made a 12-inch pizza pan worth of crust…more than 1 serving for most of us. I would suggest that 8 slices per pan is more appropriate with maybe 2 pieces constituting one serving. The total recipe carbs per www.recipenutrition.com were 64 grams and this is before you add any toppings which would have to be calculated in as well. I baked a regular pizza at the same time for my husband and he's also happy that we may be having pizza more often now.

Was this recipe listed here? That sounds very interesting. I make a zucchini lasagna and it is yummy too. This sounds interesting.

I originally got this recipe from Diabetic Connect several weeks ago. It was posted by sexyswamprat in 2009. Since I'm now assiduously counting my carbs to calculate my Novolog dosage, I needed to get an accurate per serving carb count. I did not feel the nutritional info provided in the original recipe was accurate. The recipenutrition.com site is a good resource to input recipes and get per serving nutritional values. I figured that the original recipe which made one 12 inch pizza crust yielded 8 servings or slices. It is a bit more work than I like but I'll do it again. Happy Holidays…I'll be happier when the parties and temptations are over!
