I found this recipe online because I also like coconut anything pie. I have not tried this so it's simply one of many recipes out there. If this is not to your liking, you can search google (or any search engine) for the keywords you are looking for. The nutritional facts are included in the link:

Excuse my ignorance, is there a difference between coconut CUSTARD and coconut CREAM pies?

Generally, a custard is cooked or baked and a cream pie is made without needing to be cooked. custard is usually a little more dense and a cream is whipped so it tends to be lighter.

If you use splenda it is the same as sugar cup for cup and tastes just as good without the sugar!!!

Sugar substitute is a good start and if you make the pie without the crust and just treat it as a custard type of desert, you also eliminate a large amount of the carbs.

There is a wonderful recipe for a whip desert that is for key lime or lemon, but I don't see why it wouldn't work for coconut as well. http://www.diabeticconnect.com/recipes/490-lemon-whip I use stevia instead of splenda and I always double the recipe because everyone loves it. if you used coconut water or milk instead of the juice and sprinkled some toasted coconut on top, it would be yummy.

Thanks but I was wondering how or what ingredients because I can't find anything that has a mix for it so I guess it has to be from scratch. I am an awesome cook but never made custard except rom a pkg.Got anymore ideas I'd love to know.Thank you for responding to my post as well :)
