Parmesan-Herb Spaghetti Squash

Serves 4
1 spaghetti squash(2.5-3lbs.), cut lengthwise in halves, seeded
2 tblsps sliced green onions and tops
1 tsp minced garlic
1-2 tblsp margarine
1/4 cup reduced-sodium vegetable broth
1 tsp italian seasoning
1/3 cup grated fat-free parmesan cheese
salt and pepper to taste
1. Place squash, cut sides down, in baking pan; add 1/2 inch hot water. Bake, covered, at 400 degrees until squash is fork tender,30-40 minutes. Remove squash from pan and turn cut sides up. Fluff strands of squash with tines with fork.
2. Saute green onions and garlic in margarine in small saucepan until tender, 3-4 minutes. Stir in broth and Italian seasonings; heat to boiling, Spoon half the mixture into each squash half and toss; sprinkle with parmesan cheese and toss. Season w/ salt and pepper to taste.

I like to bake mine, but I turn it so the open side is facing up and I drizzle some of my flavored olive oil in it. I bake it for about an hour.
Also, I found I realy like it with Newmans Own, Mango salsa. 3 carbs per serving and the spice is great with the squash.

Well, I will try both ways and compare; I love any kind of squash and veggies; I also steam a lot of vegetables, it keeps the vitamins in and keeps that fresh taste.

Sounds wonderful! I ususlly cook the squash in the microwave. Cut in half, remove the seeds and cover with wax paper. Cook cut side up at full power until soft (about 6- 10 minutes depending on size). When cool enough to handle use a fork to separate the strands. ENJOY!

I love pasta and when I found out about spaghetti squash I was thrilled. Now if I eat real pasta it is lacking something to me. Oh yea—-taste. Your recipe sounds great. Will try soon.
