Hello everyone! My name is Paula and I am new to this site. I was diagnosed with Type 2 in February of 2007. I am on oral medications but I am really having a hard time with menu planning. I am Italian. Need I say more. Pasta is a meal, not a side dish. It absolutely kills me to watch my family indulge and I can't. I've tried the whole grain pasta…YUCK. After 3 years, I am still struggling with glucose control. My lab work every 3 months is fine. HgA1C has never been over 6.8.

Thank you all for replying. I guess I've just been having a Paula Pity Party. I know its do-able. I just don't have the willpower to say no to all the things I feel like I have to give up. I didn't get my "girlish figure" by dieting…LOL…so this is really difficult for me. I know what I have to do. It's just easier in denial.

My wife and I also use Dreamfield (coupons available online to help with cost) but you don't have to live on pasta and Italian foods. Live a little. We have been turning to different cultures for recipes: Thai, Mediterranean, Indian, and more. It's been a great learning experience to try new foods and pay closer attention to the nutritional labels of foods and nutritional information on recipes. We have started reading "Cooking Light Magazine" and have stacks of new dishes to try. Welcome to our website… and our family!!!

I would like to find a recipe for making my own low carb pasta. There's got to be one out there somewhere. I would also like to find homemade low carb bread. Oh, and no carb beer with a killer buzz. Sorry I lost my head.
