I've finally slowed down enough to add some low-carb flour mixes for folks who have both Celiac and Diabetes.
The first mix has 55 carbohydrates per 100 grams of flour. That compares to 68 carbs for stone-ground, whole wheat. It's tasty too! The second recipe is nut-free and has 67 carbs.
You can substitute these mixes in both baking recipes and other things in place of regular flour. Just be sure to add 1 teaspoon Xanthum Gum per cup of flour!
