The holiday season is fast approaching and with that comes delicious holiday food. As a diabetic it can get tricky finding healthy alternatives to the many dishes, snacks and sweets that we should try to avoid. Post your favorite holiday recipe in the recipe section so that we can all expand our pool of healthy holiday eating optoins.

I have always made cranberry sauce. In the 10 years since I was diagnosed, I make it with splenda in place of the sugar. No one can tell the difference and I get my favorite side!

I will post it here for now. I have not figured out the nutritional values, but when I do I will get it in the recipe section. We are rather frugal here at home, so you can substitute things for what you typically use.

Vanilla Coffee Creamer

1 cup cold water
3/4 cup powder milk (just over double the milk to water ratio)
1/8 t vanilla extract
2 individual packets of Truvia or Pruvia

Mix the powdered milk with the cold water and wisk to remove any lumps.
Add the sweetener and vanilla and mix

I pour mine into a smaller water bottle and keep it in the refrigerator. If you use cream or half and half it will be much richer. You can sweeten it more if you like or just add more sweet to your individual coffee cup.

I am going to try it with mint and orange extract too. Wish me luck! LOL

Question: I rarely follow recipes and therefore don't have the Nutritional Info on many of my ideas. Can I still post?

I need to get over there and do that. I just made my own version of coffee creamers this morning...hmmm, who needs to spend all that money on those. I know there are a lot of new foodies on here since last year. We will have some good ones this year to add.

You are so right! This is my first holiday season as a diabetic and the food choices (and portion control) will be extremely important not to mess up the progress that I have worked so hard at. I have been tweaking a lot of my tried and true recipes to healthier ingredients. Since I have taken the "I can't have" out of my vocabulary and added the "I CAN have…" in its place, menu planning is easier. In fact wife and I are trying three new recipes this week to our collection and I'll keep you guys posted on them. Let's get on board to share our successes and failures with each other. We are family!
