2 cups 2% milk (1% or non fat may work although I haven't tried either)
2 boxes (4 serving size) instant sugar free vanilla pudding
8 oz whipped topping ( I used the sugar free, fat free is available, choose the one that better suits your diet)
1 cup sliced fresh strawberries
1 - 2 cups bran flakes (depending on pan size. I used an 8" pie pan and needed 1 cup of the bran flakes with crust only on the bottom of the pan.)
1 tsp rum flavoring
CRUST - Crush bran flakes into medium fine crumbs. Add rum flavoring just to moisten crumbs so they can be formed in the bottom of the pan. Place in refrigerator until ready to use.
Pour the milk in a bowl and add the 2 packages of pudding. Whisk for 2 minutes. Mix well. Mixture will be very thick.
Spread 1 1/2 cups of the pudding over the bran crust.
Layer bananas and strawberries over the pudding mixture.
Gently mix the remaining pudding and half of the whipped topping. Spread over the fruit layer.
Spread remaining whipped topping over the pudding/whipped topping mixture.
Garnish with additional banana & strawberry slices if desired.
Place in refrigerator. Allow to set for 3 hours.
