Chances are I will probably eat you! These superfoods pack a punch, virtually carb free, fiber and nutrient rich. iron, calcium, potassium, and magnesium and vitamins, including vitamins K, C, E, and many of the B vitamins. They offer a variety of phytonutrients beta-carotene, lutein, and zeaxanthin, which protect our cells and eyes from damage. Kale, Mustard, Turnip, Spinach, broccoli, bok choy, swiss chard, leeks, brussel sprouts…the list goes on. How are you getting your greens and are you getting enough? I sweat and sauteed a bunch last night with a few strips of bacon, and sweet onions. Mmm Mmmm Mmmmm

Thank you Bety for this post. I do like greens, but I rarely eat any of them. I do take a multivitamin but still that doesn't make up for the nutrients you get in eating fresh greens. My mouth is watering now with how you prepared your greens. Can I come over for dinner at your house? Girl, you're going to make me show my green colors, one leaf at a time…lol Seriously though, I'm inspired to GO GREEN!!!!!

Hehe sure come on over! I am going to make another mess of greens tonight, Old Glory has nice bagged bunches of turnip, mustard and collard, then I chop swiss chard and add baby spinach leaves. My kids choose this over pizza, every time.

LOL thank you! You're right we do! Leafy greens like Kale. sprouts, cabbage, spinach:) They are "superfoods". As you may know diabetes can damage the eyes. Macular degeneration is caused by cumulative damage to the macula, the center of the retina. It starts as a blurred spot in the center of what you see. As the degeneration spreads, vision shrinks. This should be a great concern to any diabetic. A great way to avoid this is by eating those greens because they attack free radicals before they can harm the eye's sensitive tissues.
