What I have done in the past is work on my own for several months. It takes time, but you do learn a lot while you are doing it. Then as you find recipes that you like and combine to get good after meal readings you put it together as a meal.

Then as you get a bunch of those all working together, you can draw from the plans that you have set up. You can put the whole meal on a card and keep it in a file. That way you can look at it in a glance and know that it will be a meal you can deal with.

Mix them up, toss in a few new ones along the way and keep it growing. You will have tried and true "safe" meals that you can do. It is fun, because it can push you to try new flavors and tastes. It has unlocked a lot of flavor sensations for me.

My menu planner of choice is the My Plate D, located under tools at:

There are many including the food tracker at the American Diabetes Association website. They can help with the menu planning in terms of assessing fat, carbs, calories, etc. You supply the recipes/ingredients and these sites will help with the nutritional components. TIP: make sure to understand what serving sizes you are consuming to avoid tipping the scales (pardon the pun) in either direction.
