Processed Meat and Diabetes Risk

I think the big problem with processed meats are the nitrates. You can now get hot dogs, pork sausage, bacon, ham and salami without nitrates.

We've gone so far as to raise our own chickens this year for both eggs and meat, and are buying grass-fed pork and beef from a local farmer. The taste and texture are amazing compared to the factory-farm cuts we get at the stores. And the price is very much reasonable. Only a bit more per pound, but it is denser and more filling, plus 2-7x more nutritious. So really, we're more than getting our money's worth.
