I'm always looking for new ideas for dinners and thought this would be a well received thread for us to start.

What did you have (or will you have) for dinner? I'll start…

Tonight's dinner was blackened baked tilapia that I had as a sandwich on those awesome 7 grain Deli Flat breads. I had 1-1/2 filets and no condiments. I also had about a serving of fresh cooked green beans on the side. I had a glass of Arizona Diet Peach Iced Tea.

Dessert will be a cinnamon sugar free Jello rice pudding a little later on tonight.

I am bumping up this thread again because I enjoy hearing what others have to get ideas and to share ideas with others. Tonight we had Cajun bay scallops and I had a little watermelon on the side to cut the heat. Wife had tomatoes with fresh mozzarella. It was a quick and easy meal and the scallops were on sale.

Tonight my wife and I had pizzas made with low carb tortillas w/ turkey pepperoni and mushrooms… YUM. We are thawing out some basa (fish) for tomorrow's dinner which we will bake with a cajun spice blend and will have a veggie on the side. All of these "what's on your plate" options are very helpful for planning future meals so keep the ideas coming!

Tonight I made cubed steak with capers and mushrooms and sauteed mustard greens with smoked paprika and onion and savory steel cut oats. Delicious!!!

I had a bed of baby spinach and spring mix with sliced strawberries, sliced purple onions, 3-bean salad and 1 ounce of shredded cheese, tossed together with low calorie vinegerett dressing. This is one of my favorite. Sometimes I leave out the cheese and used grilled chicken strips or a boiled egg. Yummy!

Tonight we had grilled turkey burgers on Deli Flat breads and tossed salad with sun-dried tomato vinaigrette.

Tonights Dinner: dry rub roasted Pork Loin with side of grilled veggies - asparagus, zucchini, vadalia onion, mushrooms. Made some cinnamon ginger biscotti so may have one with tea.

Tonight's dinner was grilled marinated chicken breast with freshly cooked green beans. I only rarely indulge in potatoes, rice, bread or any of that. I may occasionally have an English Muffin or Deli Flats bread like the night I started the thread above. I also only rarely have dessert unless it's a low fat yogurt, nuts or something else that's more of a snack than a dessert.

Tonight's dinner was a baked blackened tilapia! On the side a little asparagus with almonds. Oh, my God, what a great dinner. I'm not sure about dessert later tonight … any suggestions for me?

Never heard of white cherries. Where do you get those from my husband (Michael) loves cherries. I would love to surprise him w/some.

Hello Ray! Last night I used a recipe from dLife for "Ribs with Apples, Onions, and Sauerkraut". I substituted regular apple juice and used Healthy Balance Apple Juice (which only 6g carbs). Dinner time I allow myself 1 12oz. diet soda ( hace cut way back now)

That recipe sounds awesome. I was looking at the labels on most juices today as a matter of fact and could not believe the carbs … 40+ carbs for a one serving 8 ounce of fruit juice. Good Lord I ended up buying some fizzy grape kool aid tablets that are only 5 calories, no carbs. I just needed to quench my thirst. Do you know how many beers I can have at 13 g for 12 ounces??? At least I can catch a buzz from the beer!!! :) I will check out that Healthy Balance brand. Thanks!

I had a salad with 1 serving of low carb dressing with 3-4 tablespoons of red wine vinegar. I then had a bowl of soy noodles with a few tablespoons of low carb spaghetti sauce, hot sauce and grated cheese. I then ate a small piece of beef. Last I had about one cup of low carb blackberry ice cream. Everything was great. Before supper my blood sugar was 74 approximately one hour later 96.

Grilled lemon pepper chicken, brown rice and steamed broccoli. I always drink plain water. If I eat anything later it will be a few fresh blueberries with a tablespoon of whipped cream.

Hi guys,

I was reading everybody's comments and most of you drink some kind of diet drink with the meal. How about drinking water, just like Diane987 does? Regular drinks are no good because of the sugar but diet drinks are no good either; too many artificial sweeteners and chemicals. Not a good idea! Best drink: clean water.
