Recipe for Baked Salmon

Baked Salmon and Tomatoes


•4 salmon fillets (4 oz. each)
•2 C. chopped fresh spinach

•1 C. sliced mushrooms

•1 medium tomato, chopped

•1/3 C. Kraft Special Collection Sun-Dried Tomato Vinaigrette Dressing


Place salmon fillets, skin sides down, in 13x9-in. baking dish sprayed with no stick cooking spray. Mix remaining ingredients until well blended; spoon over salmon. Bake at 375 F for 20 to 25 minutes or until salmon flakes easily when tested with fork

I am sure everyone has heard about the power of Omega-3 and the sucess it has in reducing cholesterol and increasing brain activity. Yes that includes memory! Salmon is low-fat and so are he ingredients for this recipe. Salmon isnot a strong flavor fish so the added spices in the sun-dried tomatoes will make a very good palate pleaser.

Sounds delicious Danielle…I love Salmon and i'm nuts over tomato…sooo I cant imagine I wont thoroughly enjoy this…

I forgot to add the fact that tomatoes are a great source of antioxidants and an easy vegetable serving or two in this recipe. Also do not be afraid of spices and seasonings with food. Except things like garlic salt. You have the choice of non-salt in most of the spices that are pure. Mixes and rubs are almost impossible to get that way. So watch your labels carefully.
