low Carb snacks

Just wanted to see if anyone had good ideas for low carb snacks that help with blood sugars!! Thanks

I have found that the turkey and beef snake bites are pretty good. They are very filling and i also like the atkins bars, if you have a sweet tooth. They will not run your BS up and are only 2 to 3 net carbs. Sure is helping me with the sweet kick…lol…

I am sure you will receive many suggestions. I eat the following
for snacks. low fat peanut butter on stone grounds whole wheat
crackers, popcorn, string cheese, hard boiled egg, raw mixed
veggies with fat free dip. Good luck finding your favorites.

I have been making TVP cakes. I think they taste great. There made of soy. They don’t spike my blood sugar.

During the holidays I made low carb pumpkin pie. I used splenda in the pudding and used soy flour for the crust, it came out great. I will post somewhere when I write the recipes.

I posted this a few weeks ago. Its how I made my pumpkin pie and crust.

I just modified a recipe from the Joy of Cooking CookBook for pumpkin pie. I just replaced the sugar with splenda. You can use any sugar free sweetener you like. For the crust I modified another recipe replacing the flour with soy flour. Soy flour has a lot less carbs than regular flour.

For the crust I used 1 ½ cups sifted soy flour. Resifted with ½ teaspoon salt. Cut flour into ½ cup shortening. Then mixed in several tablespoons of water to form the crust. Rolled out between 2 pieces of waxed paper and put in a pie pan. Added the pumpkin filling and baked at 350 degrees for about 1 hour. Test with butter knife.

For the filling I mixed 1 ½ cups pumpkin (either fresh or canned is good)
1 12 oz can evaporated milk
½ to ¾ cup splenda
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon ginger
1/8 teaspoon cloves
4 slightly beaten eggs
1 teaspoon vanilla
Mix all of the above and add to unbaked pie shell

I ordered 50 lbs of soy flour. I plain on making the TVP cakes with soy flour soon. If they come out good, I will post on my blog. Soy flour is cheaper than the TVP.
