I guess no one on site cooks with veg meat in caserole dishes but thought I would ask but thanks just the same guys. Just thought I would try. Love ya all, Kathy

I used to use "soy meat" or TVP quite a bit until I saw that soy flour and the other ingredients in TVP actually has more carbs than I care to consume in a meat replacement. When I was a vegetarian it was perfect, but I wasn't a diabetic then. However, as with anything, I am sure there is a place for TVP in the diabetic "diet" — it just doesn't work for me currently.

I think everyone uses turkey,if not beef,but dont see why you couldn't substitute vegetable meat instead.

I actually use Veg. Meat quite a bit in my cooking.. Have a few really good recipies for use of it also.. would you like a few?/
