My husband is a Type 2 diabetic diagnosed 3 years ago. He controls his diabetes with glucophage and once-a-day insulin shot.
His problem is that he was thin to begin with when first diagnosed (6'2", 165 lbs.). He has since lost more weight and now weighs 150 lbs.
He would like to gain more weight but eats a strict carb controlled diet because that seems to control his blood sugar levels the best.
My problem is that most diabetic recipes reduce calories. I need to maximize calories while keeping carbs low and also watch his cholesteral (he also has to take Lipitor).
Additionally, neither of us like sugar substitutes, but we don't eat hardly any sweets and we both love vegetables and fruit.
