How do you plan a menu thats good for us to eat? counting carbs whats that? how do you manage on a limited income?

I hear yah!! Cause its costly to add all the special things that I need on a daily to what my family already has to have. I do eat lots of fruit now, and I didn't understand the carb thing either, but now I do. We can work at this together thank goodness for friends.

Counting carbs is very easy. Read the label and find out how many grams of carbs are in the product. 15 g = 1 carb. Try to keep your carbs limited to 10 - 12 a day. It is easy to do even on a limited budget. Eat more veggies and fruit (canned are OK too). Keep asking questions and we are here to support you.

this confuses me more. If the label says 15gr of carbs then shouldn't I count that as 15 carbs toward my total of 30 carbs allowed for that meal?

For me, counting carbs is the easiest. Brown rice, beans and peanut butter are inexpensive. I eat a lot of beans!
