Anything under 140 two hours after a meal is excellent. Also exercising helps two to three hours after a meal to keep the numbers down I found.

Skip always has good advice. Two hours after eating is the norm and trying to keep it below 140 is ideal but not always possible. It greatly depends on what you have had for the meal. Keep us posted.

You should wait two hours after you first bite. That is the general rule of testing, but if you take longer than 30 minutes to consume you meal I would go 30 minutes later.
You should try and stay under 140 two hours after a meal. The most recent studies say that damage is occuring at anything over 140 for an extended period of time.
