Things have been getting a bit heated 'round these parts lately…So how about a little senseless..means NOTHING conversation…always looking for yummy ideas to make..not just for myself, but for the grandkids when they are over…What are y'all making for dinner tonight!!!?????

Around 5pm, I had a snack of 1/2 cup of plain yogurts with 1/4 cup granola and 1/8 cup of walnuts. Yummy!!! Around 9pm, I was hungry so I made a run for the border and had 3 crunchy tacos from Taco Bell. It hit the spot. Now, a little time on the treadmill.

Hi Jib jab,
I had a. very healthy chef salad with dressing for dinner. I use fresh spinach, kale well good green leafy veggies. Turkey meat, several types of cheese. A boiled egg, a little tomatoes. Just enough of all the good stuff to make a good salad. Hugs, VL

Went out and bought some Prosciutto…(Thank you Gabby)..and some shrimp..wrapped them up and grilled them on kabobs with mushrooms…so flipping good…Kind of gets to me that I can not afford the good stuff…the organic..non GMO…stuff…good lord how do people afford that stuff???…me I stuck to Boards Head..and it was mighty good!!!!…Tomorrow is the shepards pie with cauliflower mash instead of mashed potatoes…I mentioned it to my son and he went nuts ..said he cant wait to try it!!!

I make a variation of that, only use green beans instead of the corn in the shepards pie, so i guess it is no longer really shepards pie huh? hamburg, green beans and mashed cauliflower.

I haven't used corn in mine for a long time…as much as I have always loved has never loved me…and it is whatever I say it is!!!…If I want my shepherds pie with a different veggie and cauliflower instead of mashed…it is just that my special SHEPARDS PIE!! ..I mean I have seen people walk around half naked and claim they are still wearing a dress…(honey that is a napkin not dress)…

Dinner for me is Portabella Mushroom Pizzas with some turkey & tons of veggies! It's one of my favs! I have to be careful with the tomato sauce as far as sodium, but Newman's Own Roasted Garlic is the bomb! I'm sure eventually I will get around to looking into the nutrition difference in making my own, but I'm new to all this & am making small changes. One of my favorite parts is using HEB's Creole mix of green & white onions, garlic, celery, & parsley. I also through Kale & Spinach onto them.
As far as things for kiddos - I don't have nay children of my own, but I have a nephew. He's a bit of a picky eater, but I also babysit a little girl from time to time & she loves Ants on a Log - celery, peanut butter, & a couple of raisins.

Chicken legs seasoned with sea salt, garlic powder, pepper, and oregano with lemon juice squeezed over the top and cooked in the crock pot. Don't know yet what we will have with it.

The food I eat is really boring, But I like boring food. I live alone, so I don't have to worry about pleasing anyone. When my husband was living, I had to learn to cook southern for him, that stuff is high carb. I am very interested in whole foods and how they affect the body and that my diet is balanced, but other than that I don't care. I eat to live now and don't live to eat. I have done it so long It has become a habit.

I have been on a frittata kick of late. You would have loved my breakfast today, it was mushroom and onion fritatta with prosciutto. Tonight is flank steak wrapped around green beans and glazed with Hoisin sauce. Last night I made turkey meatballs served over roasted cauliflower with Parmesan cheese.

A treat for the grand kids is my frozen chocolate covered bananas. Those have been a HUGE hit and they are so easy. To do little tike sizes you could do pieces cut about marshmallow size and dipped as a kid project. Rolling them in all kinds of fun things like nuts, coconut, sprinkles and so on.

oh God…now I need to go get Prosciutto…and yes I love my frittatas…I spent half of yesterday covering bananas and strawberries with chocolate and then dipping them in nuts and coconut…big party for the grandson…and the family always likes offering healthy foods for those who don't want to partake in the cake and cookies…OMG roasted cauliflower… I have two heads in the fridge right now…nice!!!

I try to keep cauliflower on hand at all times because it can do so many things. This recipe called for one lemon segmented and tossed with the cauliflower and roasted. Then sprinkled with shredded Parm...Oh yummy

My son is fixing chicken and potato wedges, I will have the chicken and a small salad.
On an off topic.. My Chiweenie experienced her first ice and snow event. It was so funny taking her out. She hated it and was taking high steps trying to walk. Nearly busted her but once. Now she checks the porch before taking that first step out the door.

LOVE watching animals in the snow…when I was young in Brooklyn, when we would get a good snow…we would open the window and let the dog jump out the window into the snow piles…we lived on the first floor..and with plenty of snow it was safe and funny as hell to watch!!!..Princess loved the snow..(sad face thinking about my childhood doggie)..

I will be making stuffed peppers and a turkey and sweet potato shepherd's pie. This should be good to get me through the next two days. Both will be my first time (I have never cooked so much as I have in the last month since being diagnosed).

smart to cook for two days at a time..and OMG…sweet potato shepherds pie ..yum yum.. I cant have sweet potatoes BUT I never though of alternatives for the mashed potatoes before…maybe mashed cauliflower…yummy..see I knew it was a good idea to post this question…new dinner ideas!!!!

I love stuffed peppers. I've never had shepherd's pie made with sweet potatoes. Sounds delicious!
