Trying to add a lttle variety to breakfast and lunch with cheese. I like cheese and it's a good way to get some protien that is not meat. This morning I had 2 rice cakes with cheese and a small sausage patty. I had some special cheese that has been hanging around a while and decided to try it I melted it on the rice cake for about 30 seconds(about 10 seconds too long). I think it will be better just cold. I also love Brie cheese. So what is your favorite cheese and how do you like to eat it?

Please, please don't mention cheese i love it way too much. I am a bit over weight and my cholesterol is borderline and my type 2 is well controlled ( past two a1c 4.8 & 5 ) so i try to stay off cheese. I love huge thick slices of regular cheddar melted between slices of bread. Excuse me a minute please as i have a sudden urge to go to the kitchen.

I am on a huge Fritata kick right now. I have been using Asiago, Parmesan, Goat Cheese, Feta Cheese and even a little Blue Cheese. Nice changes from my usual Cheddar. Just today I had a kale, leek and Asiago fritatta. YUM

My step-mom makes the best fritata! It's called spring fritata and it's full of onion, mushrooms, spinach, bacon or ham and lots of parmesan!

When it comes to hard cheeses, they have to be thin sliced. If it's a big chunk,I have to nibble. Need to get a scale so I can weigh out portions. I'm pretty good at eyeballing other foods, but have no idea what an ounce of cheese looks like.

I put a bit of feta cheese on my salad every day, just gives the salad a bit of something extra special. I love brie, swiss, gorganzola, cheddar, oh heck, I love most any cheese. Right now I usually keep a few laughing cow cheeses with me when I go out for a quick snack, or babybell's. mm the power or cheese !

I was a manager her in H town a lot of years ago for Hickory Farms. I love cheese except for all the smelly ones, blue and Swiss. Here at our Heb store they sell a pineapple habenaro Spelling?) sauce that is delish over brie or cream cheese with water crackers. Oh my I am wanting some now and don't have any of it. LOL

surprised no one has mentioned the blue-veined cheeses … Gorgonzola, Stilton, Roquefort etc. sitting on a Ry Krisp is pretty hard to beat

I like it, but in small amounts. I do like it on a good steak though. That is really a good combination.

I used to put it on crackers with a dollop of cherry preserves…microwave for about 20 seconds…mmmmmmmm.
but i also like the flavored cream cheeses…the caramel apple is excellent, but any of the flavors will do.

I love extra sharp cheddar and swiss cheeses the most. The swiss MUST be melted and hot. I have never had Brie. With so many here loving it I am going to have to give it a try!

I love Brie! I usually slice some onto a plate with Mary's Gone Crackers and some smoked salmon. This is often my bedtime meal. I used to include some form of jam with this but threw all my jam away when I was diagnosed.

I also love Swiss cheese and choose it for my sandwiches. I use the thin slcies to minimize the fat but it is enough to add good flavor to the sandwiche.

My little cheat treats are the Babybels. Just one little round every now and then.

Sue, they are a brand of extremely whole grain cracker. I like the gritty texture and flavor of the seeds and grains. They really help when I am having a serious carb craving. I like to eat them with some smoked salmon and brie. Very tasty!

I only like cheddar—medium or mild. I slice it and put it on top of a whole wheat sandwich thin and put it the toaster oven until the cheese melts. Heaven!

I have no less then 5 different kinds of cheese in the fridge right now…my favorite being NY Cheddar…closely followed by gouda and baby swiss…

haoleboy 2015-02-04 12:01:01 -0600 Report

Triple cream Brie is a favorite of mine but then I am not sure there is a cheese I don't love.
Currently, I have a 'thing' for cream cheese which I am eating daily rolled up in either ham or roast beef. High protein, high fat, super satisfying and almost no carbs (cream cheese has about 1 carb per ounce).
Smoked Gouda and Extra Sharp Cheddar are also in the fridge right now.

Behold the power!!!…brie is actually the only cheese I don't like…I could never get past that nasty white coating…

GabbyPA 2015-02-05 19:43:31 -0600 Report

I have a recipe for it that you would love. I only make it for holidays. It is caramelized onions, really slow cooked ones with wine, and you wrap it up in crescent roll dough and bake it....OMG. You don't see the white coating and it is so good, you won't care. There are never left overs of it. I need to figure out a way to not have the dough, but it's not the same without it.
