I need some suggestions of what to eat in the afternoon. I'm always getting hungry. I tend to skip it because I never find anything "safe" to eat.

I make this egg cup cake thing you might enjoy. I take eggs and mix in some type of veggies and sprinkle cheese on top and bake. They have next to nothing for carbs or calories, and I can eat as many of them as possible

Boiled eggs or omlelets…cheeses…green salads…all good options…so is leftover meat or chicken from the night before..always a good idea when you are cooking dinner to make an extra serving and just wrap it for lunch the next day…also in a pinch you can go for things like canned tuna or chicken…

Every night I make myself a turkey and swiss (the thin slices) on whole grain rye with mustard. I cut it in half. I eat half as my mid morning snack and the other as my afternoon snack. I have pickles and tomatoes with it. This fits my nutritional requirements very well and I like it.

Also, every Sunday my wife and I make two large soups. I pack the soup in the serving size tupperwares with the screw top and freeze some. I have two single serving soups available every day of the week.

Skipping that afternoon meal will mess with your metabolism and not help the blood sugar at all. I hope you find a way to feed yourself well.
