Coconut oil

Has anyone had experience with coconut oil ? Seems to help lower blood glucose reading and also assists your daily functions.

I love coconut oil. I use it everywhere. My hair, my body, and I use it in my food. I love the flavor it's a nice change from always using olive oil. Havent tried it in my coffee like my friend. But maybe!! We shouldn't be afraid of fat. It's the kind and the amount we consume that's the issue. What ever food issues I may have had, can't think of any, I sure don't have them anymore! I like good food that tastes good. I don't deny myself, but don't do stupid stuff either. Once I heard what high sugars were doing to me now and into the future to my body I stopped any and all bad habits I ever had. My long term health is too important to play with. With that said, have fun with your food, there's so many good things to eat to be sad about what your missing. Discover and enjoy.

I like to use about a tablespoon in a nice hot cup of coffee with some sweetner in it. It is so very yummy!

Looks like I will have to try it. Dont do sweetner, I work too hard on my health for that. I make my own creamer. I will try it in the morning and let you know. You promise it wont put hair on my chest?

I found coconut oil spray (like Pam, but LouAnn) that I use daily and I try to use coconut oil in certain recipes. I don't take the 1-2 tablespoons a day to notice if it affects me in any way. I do like it on the new gluten free toast I found. But I don't know that it lowers my glucose levels.

I've not tried coconut oil YET, however after reading and hearing all the healthy benefits of it, I plan to buy it when I do my grocery shopping this month. The expense and the fact that i had plenty of olive oil at home has bn what stopped me up until now.

It really doesn't take much coconut oil to gain the benefits of it…a tablespoon a day will work..I still use olive oil..I sprinkle some on my salads before I hit them with blue cheese..i do my stir fries with coconut oil..but I still fry my eggs in butter…sorry eggs fried in butter are just too yummy…

Hello! Eggs and butter are best friends. If by chance you want the flavor but have an issue with only butter, add olive oil when ever you use butter. No, it doesn't cut the fat but it's more body friendly and you still get the flavor which is the point!

ya, i like eggs fried in butter too… like lots of butter, then sitting on top of english muffins with lots of crevices and lots of melted butter… oh wait, that's not on the plan is it? LOL
Seriously though, can you make salad dressings with it, other than like a vinegarette? thanks, heidi

I like my blue cheese dressing it has become my best friend and because fat is your friend when you are keto I can eat it everyday!!! So I really don't experiment much with salad dressings..

Yes, I have experience!!! Just a month ago, after a short discussion where I read an article at my TOPS (Take Off Pounds Sensibly) meeting, I bought a jar and started using it for cooking, and in salad dressings, and occasionally just eating it off a spoon. It seems to help lower my blood sugar readings. It tastes good. It is better for you than even olive oil. I recommended it to all my friends and many are enjoying the benefits.

I use coconut oil to cook..mainly because it is a healthy fat…but I really haven't noticed any difference in my GL since I started using it…
