Easy chocolate pie that doesn't raise blood sugar.

Chocolate Buttermilk Pie
Ground pecans and butter, or no crust at all is needed

1 1/2 sticks butter melted
1/3 cup cocoa
1 1/2 cup Splenda
4 whole eggs
2 tablespoons flour
1 cup buttermilk or sour milk or(1 cup milk and 1 tablespoon vinegar let set 5 min)
2 teaspoons vanilla
1/4 tesp salt.
1/4 cup Hi maize 260 (optional)
Mix in food processor or with a mixer until creamy.
Place in a 9" pie pan or 8" x 8" pan. Bake at 350 for 45 minutes. The center will be a little soft.
I made this pie yesterday and had a large piece at 8:30 P.M.. My blood sugar was 78 this morning!

Look at the ingredients. almost no carbs. Even the cup of milk has vinegar in it. I wanted to use up some milk I had so I substituted sour milk it for buttermilk. Couldn't tell the difference. I added Hi maize 260 as optional as you don't have any. You can make it without and will be good and very low carb.. If you use sour milk in place of buttermilk, you have everything you need on hand you can whip it up in the food processor in minutes. It only has two tablespoon of flour in the whole 9" pie. Enjoy!!!! I am not going to put it in the recipe section as many of those recipes are high in carbs. This one along with the cheese cake are not. Don't want it to get lost.

These are great, but if you would put them in the recipe section, they stay where people can find them. Here in discussions they get lost.

Our recipe section is for everything and we even have a category in there that is called "extra low carbs or below 10...something along those lines. When you tag it properly and it will get used well. People just don't come to the discussion to look up recipes. We need low carb options listed in there to offer things to everyone. There are some great low carb desserts in there, this will just add to the selections we can offer.

If I put this recipe in the recipe section, we won't discuss it. I want to help people with it a little. I don't like the recipe section as it is always popping up when I don't want it. Diabetics often assume that if a recipe is in the diabetic section, it is low carb and we know many of them contain flour.
Flour, even whole grain flour is equal to sugar for the diabetic. This recipe contains no flour or sugar, it is truly diabetic friendly.

Hi maize 260 is a resistant starch fiber that when used with a starchy food prevents some of the starch from digesting so it doesn't raise blood sugar so much.

Sounds delicious! I'm gonna have to try this. We have a reunion this weekend so I'll fix it also carbs always shoots my sugar up.
