Chocolate Buttermilk Pie
Ground pecans and butter, or no crust at all is needed
1 1/2 sticks butter melted
1/3 cup cocoa
1 1/2 cup Splenda
4 whole eggs
2 tablespoons flour
1 cup buttermilk or sour milk or(1 cup milk and 1 tablespoon vinegar let set 5 min)
2 teaspoons vanilla
1/4 tesp salt.
1/4 cup Hi maize 260 (optional)
Mix in food processor or with a mixer until creamy.
Place in a 9" pie pan or 8" x 8" pan. Bake at 350 for 45 minutes. The center will be a little soft.
I made this pie yesterday and had a large piece at 8:30 P.M.. My blood sugar was 78 this morning!
Look at the ingredients. almost no carbs. Even the cup of milk has vinegar in it. I wanted to use up some milk I had so I substituted sour milk it for buttermilk. Couldn't tell the difference. I added Hi maize 260 as optional as you don't have any. You can make it without and will be good and very low carb.. If you use sour milk in place of buttermilk, you have everything you need on hand you can whip it up in the food processor in minutes. It only has two tablespoon of flour in the whole 9" pie. Enjoy!!!! I am not going to put it in the recipe section as many of those recipes are high in carbs. This one along with the cheese cake are not. Don't want it to get lost.
